Cranberries

  • Like many other berries, cranberries are a source of ellagic acid, an antioxidant which protects against cancer and prevents our DNA from mutating
  • Cranberry juice has been shown to not only alleviate the symptoms, but completely clear up Urinary Tract infections. This is due to the acidity of cranberries which lowers the pH of the urine, and also due to compounds in the berry which prevent bacteria from sticking to the walls of the urinary tract.
  • Contains Flavanoids which have potent antioxidant abilities and help protect our cells from the damage that cancer causing free radicals cause.
  • All the Phytonutrients combine (include flavanoids) to make cranberries an inflammation fighter. Cranberries fight off inflammation in our gums, stomach, colon, blood vessels and more.
  • Inflammation and Oxidative Stress can put our heart health in grave danger. Cranberries contain phytonutrients and antioxidents which preotect the health of our heart.
  • Proanthocyanadine which is a compound found in cranberries helps prevent plaque from forming in the teeth
  • Drinking cranberry juice every day may increase our HDL cholesterol (good cholesterol) levels.
  • Cranberries may help prevent tumors from growing


Fun Fact: Cranberries contain small pockets of air within the berry which makes them able to bounce and float in water.

Quinoa with Dried Cranberries
Quinoa with Dried Cranberries

Serving Size: 4
Ingredients
2 tbsps. walnut oil (or olive oil)
1 cup quinoa (rinsed and drained well)
2 cups water (distilled)
2 cloves garlic (minced)
3/4 cup dried cranberries (coarsely chopped)
1/2 cup walnuts (roasted and coarsely chopped)
3 tbsps. sherry vinegar
2 tbsps. walnut oil (or olive oil)
1 tsp Dijon mustard
1/2 tsp honey
1 garlic cloves (minced)
1 tsp sea salt
1/2 tsp freshly ground pepper

Directions:
Whisk in a small bowl the sherry vinegar, olive oil, Dijon mustard, garlic, salt, and black pepper.
Pour into the quinoa and toss.
Serve at room temperature or chilled.
